Maple Chocolate Chip Pumpkin Muffins

I saw this recipe on ChelseasMessyApron and decided to give them a try! I added just a little more maple syrup and honey to make them sweeter. They’re gluten free and made without butter or oils. Feel free to use less maple syrup/honey to make them healthier.

Ingredients: 

1 cup of canned pumpkin

4 tablespoons of maple syrup

2 tablespoons of honey

1 egg

1 teaspoon of vanilla extract

1 teaspoon of cinnamon

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/4 teaspoon of baking powder

1/4 teaspoon of nutmeg

1 teaspoon of cinnamon

1 cup of organic oat flour (organic oats that have been blended)

1/2 cup of melted chocolate, or dark chocolate chips

Directions: 

  1. Preheat the oven to 350 degrees Farenheit and oil up a muffin tin!
  2. Combine the pumpkin, honey, maple syrup, vanilla and egg in a bowl and mix.
  3. In another bowl, mix up the salt, baking powder, baking soda, cinnamon and nutmeg
  4. Organic Oat flour is just organic quick oats or old fashioned oats blended in a food processor till its a flour like consistency. Add the oat flout to the dry mix bowl.
  5. Add the wet mix bowl to the dry mix bowl and blend together.
  6. Stir in chocolate chips. ( I didn’t have chocolate chips so i just melted dark chocolate into the mix)
  7. Separate the mix into about 9 muffin containers in the tin.
  8. Bake for 16-19 minutes or until toothpick comes out clean. They taste better when undercooked a bit!!
